SMALL BITE:  The Pump Room is an historic restaurant inside the Public Chicago hotel, first opened in 1938. Through the years, it has been a gathering place for glitterati and A-list celebrities, including Frank Sinatra, Judy Garland, Bette Davis, David Bowie, Humphrey Bogart, Clark Gable, Ronald Reagan, and more recently, Edward Norton, Channing Tatum and Barack Obama. It reopened in 2011 with a new food concept by a world-renowned New York chef.  Dishes feature organic ingredients from local purveyors, and the regional flavors offer a “farm-to-table” experience. At night, the restaurant’s bar transforms into a supper club recapturing the glamour of the 30’s and 40’s, with a modern twist.

SIGNATURE DISH: First off, nearly every dish on the menu has won a culinary award, so it’s really true that it’s ALL great! Some house favorites include the PUBLIC Burger, with Grated Farm Cheddar, Herbed Mayo, Pickled Jalapenos And Fries (pictured above). For appetizers, the Grilled Crostini with Strawberry or Rhubarb Cream Cheese Spread will send your eyes rolling into the back of your head! And the Whole Wheat Flatbread with Black Truffle and Fontina Cheese (pictured below) is one of the most requested starters we hear. Meat lovers will delight over the Crispy Beef Short Rib with Red Wine-Smoked Chili and Polenta Fries. Late-night offerings include tapas-style small plates. After dinner, enjoy a cup of La Colombe coffee with their famed Molten Chocolate Lava Cake (pictured below).

DISH FROM DINERS: “Wow! Truly blown away by this experience! Let’s start with the ambiance … I felt like I was in an art museum. I went big and decided to go with the tasting menu ($70). It was 6 courses–everything from sushi to pasta to cod to dessert. I loved and savored every minute of it. Each dish was connected by a spice to made all the dishes play off each other in a gastronomic work of art. It’s worth every penny and you’ll remember it for a while.” AND: “This place’s A+ swanky game is on point! Ambiance is nice! Large hanging bubbles really light up the place. Started with Tuna Tartare and Salmon with Crispy Rice & Chipotle Aioli. Fish was fresh and flavors didn’t disappoint. The fresh homemade pasta was creamy, the sauce melted in your mouth. Highly recommend this place!”

FOOD FOR THOUGHT:  The Pump Room menu features a new food concept by world-renowned 2011 James Beard-award-winning chef Jean-Georges Vongerichten from ABC Kitchen in New York. According to the waiter, nearly every dish on the menu has won an award somewhere. Here’s how creative the food is: The House Pesto is made with the tops of carrots and almonds!
