Hot, new Italian at Osteria Pronto (Austin, Texas)

SMALL BITE: The JW Marriott Austin is home to one of the capital city’s newest Italian restaurants, Osteria Pronto, which means “tavern-ready” in English. (Sounds more sophisticated in Italian, doesn’t it?) Chef Gilberto Ramirez and his talented culinary team create authentic, regional Italian dishes using fresh ingredients—local, whenever possible. Open for breakfast, lunch and dinner. And guess what? They have GLUTEN-FREE pasta (see photo below).

SIGNATURE DISH: Osteria Pronto is quickly earning a reputation for its handmade pastas and tender, juicy steaks. Standout dishes on the pasta side include the chef’s Classic Lasagna, Tortelloni stuffed with Smoked Chicken, and Straw & Hay (pictured in feature photo), featuring chive and egg noodles, lardo, English peas, garlic cream and pine nuts topped off with a gooey, soft-boiled egg. Or try the Bone-In Veal Picatta with Lemon Herb Sauce that marinates for 24 hours.

DISH FROM DINERS: “We had a huge group and last-minute reservation. After calling dozens of restaurants on a super busy weekend, Osteria Pronto seated us. We had a great experience! Food was thoroughly enjoyed around the table, from the pear salad to the steaks to the pastas, which were fresh, and the sauces delicious.” AND: “The scallops were excellent! The pasta was great, as well. Our server, Jorge, guided us through the meal with recommendations that were spot on! He was attentive and knowledgeable about the menu and wines.” AND: “Everything here was amazing! I will definitely recommend this place and will be coming back here, not just for the food, but also the service.”

FOOD FOR THOUGHT: Osteria Pronto serves a delicious Wagyu New York Strip Steak (below). Wagyu cows are massaged every two weeks to ensure tenderized meat, and they are fed beer and top-of-the-line grass. “The cows live a pretty awesome life,” said one server. Also worth mentioning, Osteria Pronto puts a Texas twist on the chicken used in their Tortelloni dish by smoking it with oak and maplewood. And PRIVATE DINING is available, too, for life’s very special occasions!
