SMALL BITE: Inside the Winston-Salem Marriott in North Carolina is one of the best-kept dining secrets in town: Graze. Head Chef Richard Miller has won several prestigious dining awards, and was the runner-up in Fire in the Triad, a dining competition (similar to Iron Chef) where 16 top chefs in the area compete for the crown. Chef Miller lost by a mere one-tenth of a percent. According to the restaurant manager, Miller is “the story behind the menu,” and is allowed total creativity. He changes the menu seasonally, and buys his ingredients from local sources, such as Joyce Farms. What’s more, all the seafood is flown in fresh.

SIGNATURE DISH: The Okra Nachos (shown above) and the Lobster Mac ‘N Cheese. The Cast Iron-Seared Marsala Duck Breast is popular, too.

DISH FROM DINERS: “So we generally wouldn’t expect one of the best dinner spots in town to be in a hotel lobby, but damned if it isn’t! We heard good things about Graze following their skin-of-the-teeth, runner-up finish in Fire of the Triad last year, and we went to try the tasting menu inspired by their performance. My Lord, was it worth it!”

FOOD FOR THOUGHT: Graze features “Chef Richard’s $5 Happy Hour” Sunday through Thursday, from 4:00 p.m. – 7:00 p.m. It’s a chance to score some delicious appetizers for just five bucks, such as Heritage Farms Pulled Pork Sliders and Baked Soft Pretzels. Plus, the House Wine is just $5, all day, every day.
