SMALL BITE: Capitol ChopHouse, located inside the Hilton Madison Monona Terrace in Madison, Wisconsin, is all about the steak. And the prime rib. And the crab cakes. And the mashed potatoes. And on and on. Relaxing atmosphere, attentive wait staff and one of Madison’s most scenic locations. Check out the view before or after dinner by walking through a climate-controlled skywalk to the Monona Terrace and Convention Center overlooking beautiful Lake Monona. By the way, the terrace was inspired by Wisconsin-born-and-raised architect Frank Lloyd Wright.

SIGNATURE DISH: While you can’t go wrong ordering any of the steaks on the menu, the signature cut is the Dry-Aged Rib-Eye. Also, the Filet Mignon (top photo) is one of the most tender pieces of meat this diner has ever tasted. Very creamy, garlic mashed potatoes, too.

FOOD FOR THOUGHT: Many of the steaks are dry-aged for 28 days, giving them a delicious, earthy flavor. All steaks are sourced from local Midwest farms to ensure freshness, and they are cooked on an open-hearth grill. The Slow-Roasted Prime Rib is available only on Friday and Saturday. Three private dining rooms are available for special events.

Saturday and Sunday, 7:00 a.m. -12:00 p.m.
Lunch: Monday through Friday, 11:30 a.m. – 2:00 p.m.
Dinner: Monday through Saturday, 5:00 p.m. – 10:00 p.m.
